Do you see letters, numbers of days of the week in specific colours?

No, but when I think of the days in my mind, there's like...some kind of picture-y table thing. It's hard to explain...

When I say table I don't mean furniture...

As in, you picture the week in your mind as though it's spread out in a particular pattern? Do you visualise it in front of or around your body? I have something like that too, I wish I could draw you the week... For me it's a straight line which dips in Wednesday, then goes back up on Thurs and Fri and then Saturday and Sunday are shorter and the same height.
