Do sex and gender exist or are they just concepts made by society?

But some people have just X, some people have XXY, some people have XYY, some people have XXYY,etc. So then is it defined by genitals? But some people are intersex, some people don't have fully formed genitals, some people are like this cis guy on TLC that was born without a penis. Is it hormones? Some people produce abnormally low/high amounts of testosterone/estrogen. So what is it? Nothing. It doesn't exist.
